Documentation for esp32 example should indicate that espup install

I tried to bring-up this project example and found my local environment lacked a local esp-compatible clang compiler. It turns out the espup must be installed with --extended-llvm, so that mbed-tls can compile.

The documentation should note this and include it in the instructions.

An additional note is that there is a bug with the light-wifi example, the sw-interrupt is a required parameter for the esp-rtos initialisation. I will open a PR to address these if you wish.

Which documentation? espup is already mentioned here. EDIT: Oh you mean --extended-llvm specifically - yes - we could include that!

Sure, I haven't enabled a matrix build for all esp32 targets yet, so this might be wrong in the meantime. Open a fixing PR if so.
