Documentation only. No code, version or behaviour change.

Describes test-network Lightning settlement as running through a Lightning service provider that acts as channel counterparty, with test coins only, and names the self-custodial channel mode with unilateral exit as the release design. Removes the earlier custody characterisation from the README and from prose comments. Changelog entries are untouched.

Replace the README paragraph and the invoice-rail doc comments that called
LSP invoice settlement custodial with the test-network wording: the Lightning
service provider acts as channel counterparty, test coins only, and the
self-custodial channel mode with unilateral exit is the release design.
Comments only; no code or API change.
