title explains it all!
the iPhone that i'm connecting from is an iPhone 13 mini (running iOS 27.0) which means i'm limited to 60Hz. i'm not upset about that, however that does come with a slight issue.
since the OpenParsec app only provides 30, 60, and 120 FPS options, any monitor that is outside of that range (e.g. 72, 144, 180, 240, etc) gets set to a much lower refresh rate. in my case, my monitor is 144 Hz but it gets defaulted to 60 Hz as none of the FPS options can reach 144 Hz.
if more FPS options could be added to OpenParsec (or if it would stop overwriting the Host's options) that would be awesome :)
