This PR corrects typos/inaccurate text in plotting labels/titles to improve clarity and consistency across plotting helpers.

- Fix capitalization in GP plot labels/titles (“GP” instead of “Gp/gp”).

There was a typo in the label for the DoE convergence plot. I have corrected a few labels in addition.
