Summary
The Praxis demo folder was renamed demos/cpex → demos/policy-engine (and cpex.yaml → policy.yaml), so every demo
link in use-cases.md (added in #122) now 404s — which fails the Docs Build link check (lychee) on every branch.
This repoints all the links to the new paths, and while here, fixes the "Run it" scenario links to point at the
actual script files (/blob/…/scenarios/NN-name.sh) instead of the scenarios/ directory.
All target paths verified to exist upstream; make docs builds clean.
