fix(deps): bump cowboy/cowlib/gun/plug_cowboy/plug; drop unused hackney - #149

cowboy 2.14.2 -> 2.20.0, cowlib 2.16.0 -> 2.21.0, gun 2.2.0 -> 2.7.0, plug_cowboy 2.7.5 -> 2.9.0, plug 1.19.1 -> 1.20.3 (plus plug_crypto 2.2.0, ranch 2.3.0, telemetry 1.4.2 from the update closure). Addresses HIGH advisories CVE-2026-8466 / EEF-CVE-2026-65624 (cowboy), CVE-2026-7790 (cowlib), CVE-2026-32688 (plug_cowboy), CVE-2026-54892 / CVE-2026-8468 (plug) and test-only CVE-2026-43974 (gun). Removes hackney (test-only, zero call sites) which had CVE-2026-47071 with no 1.x fix. Closes #148
