docs(simulation): remove deprecated Simulation API docs

Summary

Follow-up to #1665. Removes the Simulation API docs after the Sept 30, 2026 deprecation. Stacked on #1665 (base is jake/ey844); retarget to main once that merges.

• Delete content/api-reference/alchemy-transact/ (Transaction Simulation pages) and the unlisted duplicate content/api-reference/data/transaction-simulation/.
• Delete the 5 tutorials under content/tutorials/transactions/transaction-simulation/ and the unused content/wallets/shared/simulate-sponsor-with-any-token.mdx snippet.
• Delete the transaction-simulation and userop-sim OpenRPC specs.
• docs.yml: remove the hidden Simulation API section, the UserOp Simulation endpoints entry, and the Transaction Simulation tutorials section.
• Remove inbound links: Simulation API cards (Data and API overviews), "UserOp Simulation API" bullets on 5 chain overview pages, the quickstart "Transactions" bullet, the Cursor guide list item, the "Transaction Simulation" row in the pricing plans table, and a simulation use-case bullet in the Data overview.
• redirects.yml: add redirects for all removed URLs to /docs/data, and repoint existing redirects that targeted removed pages.

Not changed

• compute-unit-costs.mdx simulation rows — those tables are marked cu:auto, so they should drop out when the source data is updated.
• alchemy-mcp-server.mdx "Transaction Simulation (5 tools)" — I don't know the MCP server's status, so leaving it for someone who does.
• Generic mentions of "simulate" in the Data overview use-case copy, and other unrelated simulate endpoints (eth_simulateV1, Solana simulateTransaction, etc.).

Testing

Run on Node 22: validate:docs-yml, generate:rpc + validate:rpc, test:run (237 passed), prettier check on src/openrpc. I did not run a full docs build or the link checker (lychee).
