docs(openrouter-analytics-schema): sync with openrouter-web changes

Summary

The public analytics API changed how the user dimension is returned (openrouter-web #29104). Previously the skill described user as resolving to a single "User name or email address" field. It now returns two fields per row:

• user = display name, null when unset
• user_email = email, null when none on file
