CMR-11578 - Update Guava Dependency (#2521)

* CMR-11578 - Added the guava dependency to the main project.clj so that transitive dependencies will pull this version

* CMR-11578 - Removed the explicit Guava version from the main project.clj and added a metosin/scjsv exclusion to ring-swagger-ui in search-app/project.clj
