GBIF dataset out-of-date

Hi,

Following the tutorial here: [datasets/gbif/gbif-example.ipynb](https://github.com/microsoft/PlanetaryComputerExamples/blob/main/datasets/gbif/gbif-example.ipynb), I found out that the last GBIF dataset available is from 2024-10-01...which is quite outdated !

Any plans to get the most up-to-date data anytime soon ?
