What is the "In Range" field on the Ship Card?

This is not very clear or explained anywhere

It's likely the content of the "Received Stations" sub-message: "Number of other stations (not own station) which the station currently is receiving (between 0 and 16383)."

This is one piece of information contained in the SOTDMA radio status section at the end of some AIS message types.

Yes, confirmed. It is the number of vessels the transponder on the ship receives. It is extracted from the SOTDMA messages send by the ship.
