Add in documentation "Supported APIs"

We should state how each API metadata is mapped (GitHub, Gitlab, BitBucket, Codeberg)

And also, the enrichment APIs (OpenAlex, OpenAIRE)

For each, we need a table showing how our mapping is implemented
